Pasta Salad
Ingredients
- 7 oz (2 cups uncooked) elbow macaroni
- 2 (6.5 oz ea) cans tuna, drained and chopped
- 1 small yellow or green pepper, cut into julienne strips
- 1/2 cup whole pitted black olives
- 8-10 radishes, sliced
- 1 medium tomato, seeded & chopped (or use some grape tomatoes quartered)
- 1/3 cup sliced green onions
- 1/4 cup chopped fresh parsley
- 3/4 cup bottled Italian dressing (I make one envelope of the Good Seasons
Italian Dressing Mix according to the direction on the package and use all of
it)
- 1-2 tsp. dijon mustard
- 1 tsp. salt
- 1/4 tsp. lemon-pepper seasoning
Directions
- Prepare macaroni according to the package directions; drain & rinse.
- In a large bowl, combine macaroni, tuna, yellow/green pepper, olives,
radishes, tomato, onions & parsley.
- In a small bowl, lend remaining ingredients.
- Pour liquid mixture over salad.
Best if served after refrigerating for a couple of hours.
Refrigerate leftovers.
